Arctic Roll
They always used to serve arctic roll for school dinners. I don’t know whether arctic roll was especially cheap for some reason, or whether someone just liked making it but I always enjoyed it and could never work out how it was made. Everyone always tried for seconds and thirds when arctic roll was involved.
I have watched a friend attempt to make arctic roll but was sorely disappointed when the centre melted. Here’s a cop-out recipe for desperate arctic roll lovers:
Recipe
Swiss Roll – Preheat the oven to Gas Mark 6, 400 F, 200 C
Line the base of a swiss roll tin with greaseproof paper.
4 ounces of Self-Raising Flour
4 ounces of Caster Sugar
4 ounces Margarine
2 Eggs
Beat the above ingredients together, spread evenly in the tin, and bake for 10 to 12 minutes, until a pale golden brown. Leave to cool in the tin for just a few minutes, but whilst it is still warm, tip out face down onto another sheet of greaseproof . Peel off the greaseproof paper. Using a knife, trim off the edges – leaving soft sponge. Roll the sponge up and leave to cool. When cold, carefully unroll it, and make up your version of an arctic roll. The sponge cake will not roll up if you leave it to go cold first. It has to be done whilst it is still warm.
